Judges will allocate points in relation to set criteria in a number of categories.
Entrants must also keep receipts to prove that ingredients have been sourced within the South Burnett.
1. Entries must be received by February 14, 2008.
2. Entries must be on the official entry form with the following attachments:
(a) A copy of the recipe,
(b) Details of where in the South Burnett the ingredients have been sourced, and
(c) How the dish would be described on a menu accentuating high quality South Burnett produce.
3. Receipts for the purchase of local produce should be kept but not submitted with the entry form. They should be available for viewing on the day if required.
4. Competition organisers reserve the right to screen applicants for their suitability to compete in this competition.
5.There will be a refundable entry fee of $100 for qualified chefs and $50 for apprentices (to be refunded on the day). All associated costs, including supply of ingredients, shall be the responsibility of the entrant. Entrants must also supply their own cutting boards, cutlery, kitchen equipment etc. A gas barbecue and sideburner will be supplied. For special requirements, please contact the organisers in advance.
6. Only South Burnett products can be used as the main ingredients.
7. Two serves of a main course must be prepared in the time allocated (25 minutes) however with the prior permission of the organising committee, some components of the final dish can be created before the competition. A bell will be sounded at 20 minutes and 24 minutes. Dishes will be judged at the stage they are at the end of the allocated time.
8. All dishes must contain Hi Oleic peanuts or peanut products. The use of peanut cooking oil alone will not fulfil this requirement. Hi Oleic peanuts can be supplied by the Peanut Company of Australia. Contact PCA on (07) 4162-6311.
9. For the purposes of this competition, the South Burnett shall be defined as the South Burnett Regional Council area plus the towns of Cherbourg, Yarraman, Goomeri, Tansey and Kilkivan.
10. Confidentiality of submitted recipes is guaranteed until final judging.
11. Intellectual property will remain with the chefs however the organisers have full permission to reproduce the recipes for promotional purposes without consultation. The recipes may also be published on the Internet and eventually in a cookbook.
12. The organisers of the 2008 South Burnett Regional Culinary Competition reserve the right to take photographs which may be distributed to the media, published on the Internet and used in other forms of promotional material.
13. Decisions made by the judges of the 2008 South Burnett Regional Culinary competition are final and no correspondence will be entered into.
